A Mass of Christian Burial officiated by Reverend Emmanuel Fernandez will be held at 2:00 PM, Wednesday, July 8, 2026 at Our Lady of the Most Holy Rosary Roman Catholic Church honoring the life of Edward Allison Simon, 72, who passed away on July 3, 2026. He will be laid to rest at Cossinade Cemetery. Serving as pallbearers will be Wesley Simon, Lucas Simon, Luke Micheal Simon, Hayden Simon, Payton Simon, and Harrison Simon. Hunter and Noah Stelly will serve as honorary pallbearers.

A visitation will take place at Vincent Funeral Home of Kaplan on Wednesday, July 08, 2026 from 9:00 AM until 1:30 PM with a rosary being prayed at 11:00 AM.

Ed was raised in Kaplan on his family's farm land, where he farmed rice with his father and brother. His passion for agriculture took him to the Liberty Rice Mill in Kaplan, where he dedicated 29 years of his life. In pursuit of his dream, he went on to establish his own business, Ed's Sporting Goods, alongside the Sporting Clay's Range. He built strong connections with customers, particularly with local hunters and shooting teams, including 4-Hers and ULL Lafayette shooting team members. He cherished listening to their hunting tales and their achievements on the shooting course.

An avid hunter and fisherman, Ed found immense joy in spending time outdoors and sharing those experiences with his beloved wife, Janice. He was a devoted father and grandfather, always present at his grandchildren's events, offering them support, sharing stories from his life, teaching them French, and instilling in them a love for hunting and shooting.

He is survived by his spouse, Janice Simon; his three children, Lisa Stelly (Greg), Curt Trahan (Mary) and Nicole Lege (Chad); five grandchildren, Hunter, Noah, Paige, Fallon and Emma; three siblings, Brenda Simon, Glenn Simon (Rhonda) and Annette Reed (Mike); and several nieces and nephews.

He was preceded in death by his parents, Rodney Simon and the former Wilda Mouton.

The family would like to extend a special thanks to the care team at Dr. Ronald Lahasky's office, the oncology department at Abbeville General Hospital, Dr. Kennedy Iheanacho, and the nurses at Lamm Family Care Hospice.

In lieu of flowers the family suggest donations can be made to the Lafayette 4-H Foundation Shooting Sports Program, in remembrance of Edward.

All funeral arrangements are being conducted by Vincent Funeral Home - Kaplan (337) 643-7276.
